She's Liz from Kamen Maid. It's a little hard to make, so I give 6 for difficulty level. It takes 3 days to make it. But she really looks great and cute when it finished.

Kimono Girl

It's not really a papercraft, but it's like an origami. Her kimono is made by folding the paper, without the pattern before. And for the head, I make it myself. I make a circle form in light yellow paper for the face, and black paper for her backside head. And then I make front hair, and additional hair (optional).
Then I add some ribbons (usually 2 different color) on her back to make it cuter.

Roronoa Zoro Cubeecraft

It's one of cubeecrafts I made. "No glue needed" it says, so I don't use glue (not really). Because his swords look strange without glue, so I instead use "two side scotch tape". I give it 3 for difficulty level because it's easy to make. Without his swords on his hand he's 10cm high and without his sword in his mouth, his width is 7cm.
